After years of being treated for: reoccurring shingles, inflammation, all over body and joint pain, Hashimoto’s Hypothyroidism, foggy brain, malabsorption, inability to lose weight or sleep, IBS and a myriad of other digestive issues (while being told that I was one diagnosis away from Fibromyalgia), I found a doctor that would look for a cause and not just treat the symptoms.
After testing he gave me a pretty unusual prescription: “No more gluten, lactose, additives, dyes or preservatives, change your sweetener or eliminate it all together.” I stared at him like he was a crazy man! WHAT! It was just food?
My food was making me so sick that I existed in an almost constant state of pain and exhaustion?!! I was overjoyed! There was hope! I could feel better!
THEN I went to the grocery store. After spending hours walking from isle to isle in search of food that did not contain the ingredients that I needed to avoid, I went home with just meat, veggies and fruit. I wanted really good food! The kind of food people expected to come out of my kitchen so I met with a dietician. She gave me more lists with little practical guidance. It did not take long before I was feeling hungry, confused, isolated and mad!
Physically I looked great! The weight was falling off and I had so much energy! I was feeling better than I had in years. BUT my inner foodie was grieving! Naked meat, veggies and fruit were not my idea of good food. I had a choice to make. I could “waller” in self pity or I could get up and do something about it!
Then my research and development began. My kitchen became my laboratory, my husband, and family my guinea pigs. I developed deliciously doable ways to prepare our favorite dishes without the ingredients that would make me sick. No one could tell the difference!
My mission became making it deliciously doable and affordable for others to feel better or improve their health one meal at a time.
